Quarter Share Options

Recently, a customer asked a great question: what is the difference between a Standard quarter share and a Custom quarter share?

Knowing that when one person has a question, other people will most certainly have the same question, we wanted to share the answer with all of you. It is a detailed answer so hang on to your hats, here we go —

When you are considering committing to a quarter share of beef, you have two options: a standard quarter or a custom quarter.

A Standard quarter is a pre-determined cut and wrap order. This means you do not have to answer any questions about how you want your quarter cut. Our butcher created this standard cut option from years of experience with how most customers want their quarters cut. For example, most people want 1” thick steaks, 3-4 lb. roasts, and want ground beef in 1 lb. packages. So those are the specifications they use in the Standard quarter.

With a custom quarter, you get to make personalized choices about how your quarter is cut. Customers typically order a custom share if they want their meat cut in a specific way, such as thicker steaks, more cuts made into ground beef, or want a prime rib roast instead of rib steaks. With custom, there can also be some give and take with a few cuts. For example, there is only one flank steak, skirt steak and flat iron steak per HALF so a customer will be able to rank what cuts they want the most and we will do our best to match you with someone who wants different cuts than you. Note that with a standard quarter, the butcher does not cut the flat iron separate from the chuck roast and you will receive either flank or skirt.

If you are splitting a quarter with another family, a standard quarter will be easiest so you each get a relatively equal amount of steaks and roasts.
