Our premium beef is sold as a quarter, half or whole beef carcass.  This allows the consumer to determine how the beef is cut up and packaged.  If you are unfamiliar with this process, we will help you during the ordering process by explaining the basic cuts of beef and how to best to fit your needs.


The total cost works out to roughly $6-7.00/lb of packaged meat.  This price includes all cuts of beef from ground beef to T-bone steaks and everything in between.  The reason for the variation in price is that each animal yields slightly different amounts of packaged meat depending on its particular build and live weight.  A typical ¼ steer will yield between 100-120lbs of packaged meat, costing roughly $700 total.  A detailed description of this price breakdown follows below.

 

The total cost is comprised of two components: (1) purchasing the steer from Double J Ranch, and (2) paying Okanogan Custom Meats’ cut-and-wrap fee.

 

The price of the steer is determined by its live weight at $1.75/lb. Please note that we have modestly increased our price per pound to reflect the dramatic increase in the current beef market. Our typical grass finished steer weighs 1300lbs. So if you were purchasing ¼ steer, it is 325lbs x $1.75 = $568.75.  In addition, we charge a $25 handling fee per ¼ steer.  As a result, the total purchase price to Double J Ranch is roughly $593.75.  

 

Okanogan Custom Meats cut-and-wrap fee is $0.49/lb of the animals dressed out weight.  Usually the dressed out weight, or hanging weight, is 60% of the live weight.  Our typical 1300lb steer dresses out at 780lbs.  So for your ¼ steer that is

195lb hanging weight x $0.49 = $95.55, plus a $25 dollar handling fee (Okanogan Custom Meats) = $120.55

 

During the cut and wrap process, at Okanogan Custom Meats, bones and fat are removed and the final cut and wrapped weight usually ends up being between 100-120lbs of healthy lean beef for your typical ¼ steer.  Remember each animal is unique so these are estimates.  So your total is roughly $714.30 for ¼ of a 1300lb prototypical steer.  Keep in mind that these numbers do vary due to some diversity in animal size. This price is about  is significantly cheaper than what you will pay for beef of this quality at the store.  These same numbers can be applied to larger beef orders as well.
